Recipe: Dairy Free Chocolate Ice Cream

It’s pretty darn difficult to get a good picture of ice cream.


There are days when you just need some flippin’ ice cream. That time of the month, bad day at work, frikkin’ hot outside, combination of all of the above. Regardless of your reason (or no reason at all!) here is an easy dairy free chocolate ice cream recipe that is also low carb. I always keep these ingredients lying around the house, so it can be whipped up last minute. Within 20 minutes, if you keep your ice cream maker in the freezer (which I do, at all times, just waiting for this exact moment).

If chocolate ain’t your thang, here is a recipe for low carb blackberry ice cream.

Dairy Free Chocolate Ice Cream

Ingredients

  • 4 tablespoons Cocoa Powder
  • 2 tablespoons Sugar Free Chocolate Syrup
  • 1 teaspoon Cinnamon
  • 1 can Coconut Milk/cream full fat
  • dash Salt

Instructions

  • Mix all ingredients and set in ice cream maker, as per ice cream maker's directions
  • I tend to eat mine straight out of the ice cream maker, so it's a bit soft (hence the picture). You can scoop it out of the maker and put it into a bowl - pop bowl into freezer to firm up ice cream.

This dairy free chocolate ice cream recipes makes 2-3 servings.

Enjoy with a home made whipped cream – just stick an immersion blender into a cup of heavy whipping cream (and a few drops of stevia, if so desired) and you have yourself some high fat, low carb bliss. I totally broke down and got a super cute purple immersion blender. And I have the turquoise Cuisinart Ice Cream maker. NO SHAME IN THE CUTE COLORS!

    Hi, I’m so glad I found your site! I did a 67 mile bike ride this weekend in ketosis and felt great overall. I did get a little light headed and shaky around mile 50 & I’m wondering if it was a salt issue or what. I took 4 succeed caps, that’s all I had & also about 1/2 tsp real salt in my water. It was overcast so I wasn’t sweating like crazy. Does this eventually go away or will I always have to try & take extra salt during rides or what other advice would you have?

      Rock ON for the metric century ride you did! Have you been biking for awhile while in ketosis? It sounds like me like it could have been a salt issue. Let me know how often you’ve been biking so far in ketosis 🙂

        That was my first long ride in ketosis…I normally use gu every hour or so. …I only started low carb about 19 days earlier but I did test to make sure I was in ketosis before the ride so I would know whether or not I should cave & eat carbs or if I would be fueled…I was amazed how good I felt though except that one little spot. I may have also had too much caffeine or something..I did start feeling better towards the end of the ride.

          OH If that is your first long ride in keto, then yes, you will see a temporary decrease in performance. Have you read the Art and Science of Low Carbohydrate Performance by phinney and volek? It’s awesome for endurance cyclists on keto!
