Every single week there is a head of lettuce in my CSA box. So….sick….of salad. Seriously. I already eat a salad every single day at work. I don’t have it in me to come home and eat MORE salad. So I had to find something to do with all this lettuce!!I also had an excess of cucumbers, so I decided TO BLEND BOTH into an UNHOLY GREEN UNION of lettuce and cucumber soup!
According to the almighty Google search results, people have used lettuce successfully in soups. The soup honestly tastes like cucumber – you can’t taste the lettuce at all (which is a win in my book).
Lettuce and Cucumber Soup
Ingredients
- 1 head Soft Leaf Lettuce
- 1 Cucumber Large
- Olive Oil
- 2 cloves Garlic
- 0.5 lemon Lemon Juice
- Salt And Pepper
- 0.5 cups Cream
- Chicken Broth optional
Instructions
- If the lettuce you are using has heavy ribs, tear the leaves off the rib
- Chop up the cucumber into pieces
- Sautee the lettuce and cucumber with olive oil and minced garlic until lettuce is wilted/soft
- Blend (preferably in a hardcore blender like a Vitamix) lettuce/cucumber mixture with lemon juice, cream (desired amount) and chicken broth if you want to thin it out
You can serve the lettuce and cucumber soup hot or cold, however you prefer. I sprinkled some grated Parmesan on the soup along with pepper. I made mine originally with a cup of chicken broth and about 1/4 cup of cream, but I think it came out too thin so I’m recommending the opposite. Start with cream and thin with chicken broth.
